Do you think that some animals are overly cautious?
If so please list the said animal or animals and explain your reasoning.

They're trying to survive, and there's nothing too bad about being cautious to stay breathing.

The cautious animals are sometimes the most successful. However, they tend to take fewer risks which may actually not be a threat at all.

My dog's sense of bravery is beyond misplaced. He will attack anything he knows he can't kill, like horses, the malamute down the street, and vacuum cleaners. But then he will flee at the sight of things like flower petals, leaves and, tin foil.

Raves behave similarly, they are know to harass eagles and wolves but if you place a key or mirror in front of them they will panic.

Most reptiles are extremely cautious, many snakes will attempt to flee conflicts that they could actually win due to their instinct to avoid it.

That's why often the first bite is dry, and then only after going through a complex threat display ritual. For venomous reptiles that's true. I've found the most fearless reptiles are monitor lizards, and reticulated pythons. Some won't even create a threat display and simply attack.

Lions have been known to flee from cheetahs, cows, baby warthogs, and all sorts of smaller animals. One of the worst cowards of the animal kingdom I'm afraid. There was even an instance where a honey badger inflicted mortal injuries on a lioness and possibly caused her to die.
Black bears are also pretty up there. They do anything ANYTHING to avoid serious conflict. Even if its cubs are in danger.
Wolves have been defeated by wolverines 1 on 1 fights.
deer and antelope run from everything.
cheetahs run from everything.
need I say more.

Lol. That's ironic considering lions are possibly one of the most audacious wild animals that have ever come into existence. Dominant male lions regularly attack several nomadic lions at a time, I don't know any other animal that displays this behavior; save for humans. Jumbo I know you dislike big cats but if your going to bash them at least get your facts straight.
Never heard of that happening, and even then getting beat up doesn't mean your a coward.
Well they are gracile herbivores, so that is expected.
To be fair they have little chance of surviving if they go around pissing off predators more than twice their size.

^Okay just because a pair of lions didn't engage a trio of youngsters, doesn't mean they represent the entire species.

The bonobo is another canidate. They are only the apes I don't support because quite frankly, bonobos are small and girly animals. I've never heard of them being aggressive.
They're not scaled down chimps. They're MUCH smaller, weaker, and more gracile animals. They prefer to have sex to solve disputes (not kidding) rather than aggressive confrontation in the manner of chimps.
Gorillas, Orangutans, and chimpanzees I support strongly. Bonobos? No way.
